Kimchi Jjigae, for SLSS

You gonna need the following:

Kimchi (duh) - a cup or so, depending on taste
Mushrooms - 5 or 6 big ones
Pig parts (optional, but oh so tasty) - 8 oz or so
Napa Cabbage (optional) - 4 or 5 big leaves should do the trick
Onion - half a big yellow
Tofu - 12 oz
Chicken Stock - 4 or 5 cups
Green Onion - 2 or 3
Cilantro (optional, especially if you are redchaser)
Gochujang (semi-spicy Korean pepper paste) - 2-3 tbsp
Gochugaru (Korean red pepper flakes - I substituted ordinary gringo pepper flakes) - a few tsp
Soy sauce - 2-3 tbsp
Garlic - 3-4 cloves
Ginger - half an inch or so
Ground Black Pepper - to taste
beer (optional, but oh so tasty as well) - at least 3 bottles

Start by opening a beer.

Drink a bit of it while you ponder the life choices that led you to try your hand at an obscure cuisine which relies heavily on offal and fermentation. Drink a little more while you ruminate on the (mostly played out) "farm to table" movement and wonder if hipsters actually know this is code for "Peasant Food".

Open another beer.

Cut up the tofu into shapes that you enjoy putting in your face hole and set aside.

Mix the Gochujang, garlic, ginger, soy sauce, and pepper flakes together. If it is too thick and hard to mix, add some of the chicken stock for lube. Stir that around until a nice slurry is formed up.

Put a sturdy dutch oven on the stovetop on low heat, and if pork is optional for you, add a little oil. If pork is de rigeur for your culinary enjoyment, chop up your pork in sizes you most want to put in your mouth and add it to the dry, hot pan...it makes its own oil!

While your pig is pigging, chop up some onion and some mushrooms. If you are using Napa Cabbage, chop that up too.

Before your pig gets too crispy, throw in the onion, shrooms, and cabbage if using. Stir that around.

If you aren't done with your second beer by now, you are not trying. Open another one.

Chop up the kimchi to suit your oral size requirements and add to the pot. While you are at it, add the gochujang mixture and the stock too. Stir that about for a bit and bring to a simmer.

Add the tofu. Drink twice because you are using tofu.

Chop up the green onions and cilatro. Taste the Jjigae and add pepper to regain some of the pepper heat killed by the thermal heat.

When you finish your last beer, add the cilantro and green onions to the pot and stir.

Enjoy with your significant other, and be wary of the attempts by your spouse to finish off your bowl as well.
